Snowball Surprises

I tried this recipe from a Christmas Cookbook and loved them. So, I made 168 of them for a cookie club. They are just the right sweetness and richness for me.

1 cup (2 sticks)butter
3/4 cup powdered sugar divided1
1 teaspoon vanilla
1 3/4 cup flour
1/4 tea salt
1 Cup pecan halves Toasted and finely chopped
1 Bar of Chocolate candy (I used chocolate chips)

1. Lightly grease cookie sheets. Beat butter and 1/2 cup powdered sugar till blended. Add vanilla and salt. Gradually add flour and pecans.

2. Shape in to balls about a tablespoon full. Press chocolate pieces in side of cookies and cover with dough. Place balls on cookie sheet Refrigerate 30 min to 1 hour.

3. Preheat oven to 350 degrees. Bake 13-15 min or till edges are golden brown. When slightly cool Sprinkle with remainder powdered sugar or roll them in it... up to you.

YUMMMMM Makes about 36 or 26 when I make them.

Cranberry BBQ Meatballs

Cranberry BBQ Meatballs
2 – 16 oz. Packages Armor Original Precooked Meatballs
16 oz. can Jellied Cranberry Sauce
1 cup Barbecue Sauce Regular or Honey

Combine the Cranberry sauce and BBQ sauce in saucepan. Heat until bubbly.
Add meatballs and sauces in crockpot and simmer until meatballs are warm.

Cabbage Rolls

1 lb. hamburger
½ to 1 cup onions
1 to 2, garlic cloves pressed
Salt & pepper to taste
2 cups uncooked rice
1 head of cabbage
2 to 3, 6 oz. cans of tomato sauce or 1 jar of
mom’s tomatoes sliced or fresh chopped
1 cup cheese (any kind)

Cook rice per directions. Cook hamburger, onions, garlic, and spices in skillet over med-high heat. Mix rice, hamburger mixture, and 1/2 cheese together.
Bring water to boil and cook whole cabbage for 5 minutes. Throw away top layers of cabbage when cooked, they will be too soft to use. Unroll leaves of cabbage. Remaining cabbage will be chopped and put into mixture or bottom of casserole dish.
Roll mixture in cabbage leaves and place in a greased casserole dish. Put tomatoes on top and then remaining cheese.
Cover and cook at 350 degrees for 40 minutes.

* Lazy man’s way: chop cabbage and add to hamburger when cooking and mix cheese in casserole.

* To make healthier:
use less cheese, hamburger, rice
add wheat germ, crushed flax seed
add more veggies

Stuffed Peppers

1 lb. hamburger
½ to 1 cup onions
1 to 2, garlic cloves pressed
Salt & pepper to taste
2 cups uncooked rice
4 medium to large green, red, or orange peppers
2 to 3, 6 oz. cans of tomato sauce or 1 jar of
mom’s tomatoes sliced or fresh chopped
1 cup cheese (any kind)

Cook rice per directions. Cook hamburger, onions, garlic, and spices in skillet over med-high heat. Mix rice and hamburger mixture together. Put in tomato sauce.
Cut off tops of peppers and remove seeds. Boil for 10 minutes. Make sure water is boiling before adding peppers. When cooked removed peppers and drain upside down for about 5 minutes. Grease casserole dish and add 1/3 the cheese in the bottom of the peppers. Stuff peppers with mixture next. Place in casserole dish. Put remaining mixture around peppers. Top with remaining cheese.
Cover and cook at 350 degrees for 45 minutes. Last remaining 10 minutes remove lid for a crispy top.

* Lazy man’s way: chop peppers and add to hamburger when cooking, and mix cheese in casserole.

Old Fashioned Beef Pot Roast

4 pound roast chuck
2 TB flour
1 TB oil
1/2 cup water
3 med onion cut in 6 chunks
1 pound carrots
2 tsp salt
1/2 tsp dried marjoram
1/4 tsp thyme or oregano
1 pound potatoes

Sprinkle roast with flour. Brown in big pot or Dutch oven. Add rest of ingredients. Put in oven at 350 for 2 hours. Make gravy if you want with the juices.

Amanda and Julia Child's Potato Salad

This is a recipe I got after Watching Julia Child. This was such a hit we all make it a lot. It is the now normal Potato Salad. Thank you Julia!!

Make as much as you want and you can change up the amounts as you like.

Cooked potatoes
Celery
Cooked Bacon maybe a little Greece with that
Hard Boiled Eggs
chives if you want
chopped pickle
Half Mayo and half sour cream
Salt and Pepper.

Strogonoff

This is an old Yummy standby that my family uses a lot.

1 pound Hamburger
Cooked macaroni
1 can cream of mushroom soup
3/4 can of milk
parsley flakes
1 cup sour cream

Brown Hamburger add all ingredients except for macaroni. Cook for about two min. Add macaroni and cook for about 10 min or until ingredients are melded. Don't forget Salt, Pepper and dried Parsley.

Shelly's Corn Bread

This is a huge hit!!!!!

You can make this a million ways but the way I make it is.

2 pkgs of Jiffy corn bread mix
Add as many eggs it calls for on the boxes
1 can creamed corn
sour cream
if you want shredded cheddar cheese
and add just enough milk to make it wet enough to make batter.

Bake temp on package directions for about 10 more in and check to see if it is done.

Taco Soup

I think Shelly gave me this recipe.

1 Pound Ground Turkey
1 can chili beans with liquid
1 can black beans with liquid
1 can corn
2 cans diced tomatoes
2 cups chicken stock or water
1 pkg taco seasoning mix

In a skillet cook turkey till done. Put all ingredients in a slow cooker Cook High 4 hours or low 8 hours. Serve with tortilla chips on top with sour cream if you would like.

Asparagus Ham Spirals

This is Teresa's recipe she made it for Grandma's Birthday Party.

1 Bundle of Asparagus
1 tube 8oz refrigerated crescent rolls
1 carton 8oz spreadable chive and onion cream cheese
4 thin rectangular deli ham slices
2 TB melted butter
1/4 tea garlic powder

Steam Asparagus set that aside. Put flour on counter open rolls. Squish together to make one rectangle. Top with Cream cheese. top with ham and asparagus. Roll up and slice to make a @. Lay down on a baking pan top with melted butter and garlic powder mix. Bake 375 degrees for 10-12 min.

Butter Sauce for Vegetables

This is Shelly’s recipe.

1 Stick of Butter
1 tsp season salt
1/2 cup heaping flour

Mix it in to vegetables while cooking add more if needed.

Pepper Steak

This is Teresa's recipe. I got it June 25th of 2001.

3/4 cup shortening
3 cup water
1/2 onion
1 1/2 tsp garlic
3/4 tea ginger
3 TB cornstarch
6 TB soy sauce
6 TB sugar
Chopped green peppers
Rice
Big round steak chopped up as big as you like it. Brown meat will all ingredients till done. Sauté Green peppers add to meat and serve over rice.

Shelly's Meat Loaf

This is Shelly’s Meat Loaf, this is soo good.

1 pound Hamburger
3/4 cup grated carrots
1 tsp oregano leaves
2 tsp garlic powder
S&P
3/4 cup oatmeal or cracker crumbs
1/2 cup grated cheese
1 tsp parsley
8 oz. can tomato sauce
1 egg
4 tab wostershire sauce
1/4 cup milk maybe......

Put all in a loaf pan at 350 for 1 to 1 1/2 hours. When it is 20 min till done add another can of tomato sauce mixed with oregano ketchup and salt and pepper. Then 10 min till done put on some slices of cheese.

Tuna Noodle Newberg

This is a family recipe Shelly makes it a lot and you can make it full fat or you can lower the calories by getting fat free evaporated milk, or light cheese, or fat free cream of celery soup. Up to you but this is sooooo good we make it all the time.

2 can cream of celery soup
2 can evaporated milk
3cups shredded cheddar cheese
1 to 1 1/2 cups miracle whip 4 cans of tuna
1 bagcooked noodles (I like egg noodles)
3 cup or more sliced celery
3 cups onion
oil and butter


Sauté Onions and celery oil and butter till soft. Cook pasta separately till done. Add all ingredients together. Put in the oven 350 degrees for 25-30 min

Butternut Squash Soup

I received a butternut squash from Bountiful Baskets and had never used one before, so I searched for recipes, found one I liked and made it my own. It is soo good. Amanda and I loved it. You can adjust the jalapeno to your heat liking. My jalapeno I used gave it a good kick!

2 Tbsp. Butter
1 Tbsp. olive oil
I onion diced
2 tsp grated fresh ginger or 1 tsp dry powdered ginger
I jalapeno seeded and diced
1 (2 lb.) butternut squash peeled, seeded, and cubed
2-3 cups chicken broth depending on thickness of soup you want
1 can of lite coconut milk
1 tbsp. brown sugar
salt and pepper to taste
can add sour cream as a garnish

Melt butter and olive oil over medium heat. Stir in onion, ginger, and jalapeno pepper. Cook until onion has softened about 7 min. Add butternut squash and chicken broth, brown sugar, and salt. Wait to add pepper till you taste you may not want to add any extra heat. Bring to a boil over high heat. Reduce heat to med-low, cover, and simmer until squash is tender, about 30 minutes. Add coconut milk, cook and stir 5 min more. Puree soup in batches in blender or use a stick blender and puree in the pot. Preseason and serve as is or with sour cream.

Goulash

This is my mom's recipe, and my brothers favorite meal. We love it and it is hardy.

1 LB hamburger
1/2 onion
Pint of Tomato’s
Can of Corn
1/2 cup Ketchup
Chili Powder
S&P
Macaroni

Fry hamburger with onion. When done add rest of ingredients add chili powder to taste along with extra ketchup(you will need more). Then add Macaroni and cook for about 5-10 more min to let the ingredients meld.

Cabbage Salad

We all love to make this salad and you can make it all different kind of ways. This is just one way.

Cabbage
Chicken
Sliced Almonds
Miracle Whip
Oriental Noodles

Boil chicken (put garlic salt to water)cut in to cubes. Cut cabbage mix together. Add almonds and onion if you like onion. Mix in miracle whip. Add S&P. Chill and serve on top of Oriental noodles. NO measurements based on how much you want to make.

You can also omit the miracle whip add one part vinegar to two parts oil with S&P then add equal. Taste it. Then add Ramon noodles and mix all together.

Over Night Yeasted Waffles

I made these for my in laws when they came to see me. They were easy and great.

Makes 6-8

1 3/4 cup milk
8 tlb butter
2 cups flour
1 tbl sugar
1 1/2 tsp yeast
1 tsp salt
2 eggs lightly beaten
1 tsp vanilla

Heat milk and butter in sauce pan on med low, until butter is melted. Let chill slightly till warm. Whisk together flour, sugar, yeast, and salt. Gradually add milk and butter then add eggs and vanilla. Refrigerate for 12-24 hours when ready whisk till bubbles are out and then make waffles.

Jerry's Orange Julius

This is a recipe from my father in law Jerry. He is very sweet and makes great Orange Julius's.

1/2 can Orange Juice Concentrate
1 cup water
1 cup milk
1/2 tray of ice
1 tsp Splenda
1 tsp vanilla

Blend and love it.

Pasta e Fagioli

Pasta e Fagioli (The amounts here are just kind of guesses, but its better if you kind of improvise and do it how you want anyways)

To start fry diced onions, carrots, garlic, celery, and parsley, as if you were going to make a ragu' (in olive oil of course)

Next throw in about 2-3 cans of beans (I used black eyed peas here in the states (Don't use kidneys, but garbanzos should work as well)) and let them cook down on medium to medium high heat. You can add water too, because you want it to be soupy...and let the beans "disfare." (Disfare means to like come apart or undo themselves)

Add various spices...rosemary, basil, salt, and pepper are all really good, also some pepperoncino. When the beans are fairly well cooked down and you've got a pretty soupy mixture add a can of diced tomatoes and some chopped bacon (cooked already). Cook a little longer, add water if it ever gets too dry.

Put in your pasta...typically something small like you would put in a soup...broken spaghetti works really well too...and let it cook in your bean soup (because of this your soup should be pretty liquid-y before you put in the noodles so it doesn't end up too dry as the pasta absorbs the soup as its cooking) Let it cook till the pasta is done and it is at the desired consistency.

Serve with parmesan cheese on top and a drizzle of olive oil...and voila! Pasta e Fagioli! If you have any questions please call.

Mark's Ragu

This was in Italian and I corrected most of his translataion to make it more understandable. The second comes from an old companion of mine who's American but the recipes authentic. The first one is really good and I'll let you know how the second one goes.

Ragu:
250 grams of pork (pork in little pieces)
1 carrot
1 onion
1 leg of celery
50 rams of wine (sparkling grape juice works great, that’s what I used) (yes wine!!!) white or red (when you cook it all the alcohol disappears)
1 pinch of nutmeg, Pepper, salt, 1 bay leaf
400 grams of tomato sauce
Cut the carrot, the onion and the celery. Put them in the pot with a little bit of oil and fry them not too long. When the vegetables are cooked put the pork and then the wine (grape juice). Then the nutmeg, pepper, salt, and bay leaf. When the pork is cooked, and you feel a good smell....put in the tomato sauce!!!! Wait a couple of hours (or even three) e buon appetito

Blueberry Torte Squares

I discovered this in healthy taste of home. But who needs healthy so instead of using lite and fat free (yuck), I used regular ingredients and it is to die for. I have made it many times since discovery. I have tried it with apricots and other fruit. YUM!!!


2/3 cup butter, softened
3 Tbsp. plus ½ cup sugar, divided
1 ¼ cups of flour
1 pkg. cream cheese
1 cup of powdered sugar
1 carton (12 oz.) whip cream
2 Tbsp. cornstarch
¾ cup cold water
3 cups fresh blueberries (frozen works too)

In a small bowl, cream butter and 3 Tbsp. sugar. Gradually add flour and mix well. Press onto the bottom of a coated with cooking spray, 13 x 9 baking dish. Bake at 350 degrees for 12-14 minutes or until lightly browned. Cool before adding other ingredients.
in a large mixing bowl, beat cream cheese and powdered sugar until smooth. Fold in whip cream. Spread mixture over crust. Refrigerate for 20 minutes.
Meanwhile, in a large saucepan, combine cornstarch and water until smooth. Stir in blueberries and remaining sugar. Bring to a boil, cook and stir for 2 minutes or until thickened. Cool to room temperature.
Spoon topping over cream cheese layer. Cover and refrigerate. Cut into squares.

Makes 2 dozen
1 square is 178 calories

*can use different kind of fruit.

Last Minute Supper

Here is an old family recipe. If spam is not wanted can be substituted with ham.



1 can (12 ounces) Spam diced
1 medium onion chopped
1 can cream of mushroom soup
½ cup milk
2 cups diced cooked potatoes
2 tsp parsley
Salt & pepper per taste

Boil potatoes until tender with fork. Sauté Spam and onions until onions are tender. Mix together soup and milk until smooth, add spices. When potatoes are done add all ingredients into a pan and cook over low heat for 10 minutes to blend the flavors.

Carrot Soup

I got this from the Food Network and I love it and make it a lot. It is cheap and easy to make and I usually get lots of Garlic bread to eat with it!!! Yummmy!!


Ingredients
1 tablespoon olive oil
3/4 pound carrots, roughly chopped
1 medium onion, roughly chopped
1 clove garlic, smashed
2 teaspoons dried oregano or Italian seasoning
1 3/4 cups chicken or vegetable stock
1 1/2 cups water (I take out the water and use all chicken stock and it usually needs more that what is called for)
Salt and freshly ground black pepper
2 tablespoons light sour cream, divided

Directions
In a medium saucepan, heat the olive oil over medium heat. Add the carrots and the onion and sweat until the mixture starts to soften, about 5 minutes. Add the garlic, and oregano and cook until fragrant, another 1 to 2 minutes. Raise the heat and deglaze the pan with the stock and water. Bring to a boil and reduce to a simmer. Cook until the carrots are tender, about 8 to 10 minutes. Cool the mixture for about 5 minutes before processing.


Process the soup in a food processor or blender until smooth. Season with salt and pepper, to taste. Pour into serving bowls and swirl in a heaping teaspoon of sour cream before serving.

Jane's Coleslaw

This was Jane's recipe that I got from bunko, I have it typed up at work because I brought it to a pot luck and had lots of people ask me for the recipe. I like it with blueberries and/or grapes best. I modified it and put suggestions with recipe. You may already have it but here you go.


Coleslaw

In a large bowl put in...

1 pkg. of coleslaw mix (broccoli works too)
¼ cup seeds or nuts
(sunflower, walnuts, pecans, almonds, pumpkin, any kind wanted)
¼ to ½ cup craisins
½ to 1 cup of fruit, mix & match
(blueberries, apples, mandarin oranges, pineapple, grapes, any kind wanted)

Mix together the following…

1/2 cup mayo
1 1/2 tbsp. sugar (can use Splenda)
½ to 1 tbsp. milk

Let set for a few minutes for sugar to blend.
Add mayo mixture to salad.
Chill. Eat. Enjoy

Optional chicken (rotisserie is best)

Hamburger Gravy

This is to put over mashed potatoes. It is very good. Sorry no measurements but it is easy. If you need help call me.

Hamburger
Flour
S&P
Milk

Brown your Hamburger when it is done, add enough flour to coat the Hamburger and the pan a little you want it nice and coated well. Then fry for about a min until the floury taste is gone, then add your milk. Add enough that all is covered about half way up the frying pan or so. Then add salt and pepper. Whisk right away and don't stop until it is done. As soon as it comes to a boil that is when it will thicken up. You have to get it to boil. When it is done just pour over your mashed potatoes.

Sausage Gravy

Sausage
Flour
S&P

Banana Bread

Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
1 TB Cinnamon

Directions
1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2.In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs, cinnamon and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3.Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Sweetened Corn Puffs

This was a recipe from Gretchen Koonz my friend that had a great 4th of July party and Shelly and I fell in love with this stuff.

2 Bags of Corn Puffs (in blue bags)
1/2 lb. or one stick of butter
1 c. Sugar
1/4 C. H2O
2 TBL Karo Syrup

Bring to a boil and pour over the corn puffs stir.
