Cabbage Rolls

1 lb. hamburger
½ to 1 cup onions
1 to 2, garlic cloves pressed
Salt & pepper to taste
2 cups uncooked rice
1 head of cabbage
2 to 3, 6 oz. cans of tomato sauce or 1 jar of
mom’s tomatoes sliced or fresh chopped
1 cup cheese (any kind)

Cook rice per directions. Cook hamburger, onions, garlic, and spices in skillet over med-high heat. Mix rice, hamburger mixture, and 1/2 cheese together.
Bring water to boil and cook whole cabbage for 5 minutes. Throw away top layers of cabbage when cooked, they will be too soft to use. Unroll leaves of cabbage. Remaining cabbage will be chopped and put into mixture or bottom of casserole dish.
Roll mixture in cabbage leaves and place in a greased casserole dish. Put tomatoes on top and then remaining cheese.
Cover and cook at 350 degrees for 40 minutes.

* Lazy man’s way: chop cabbage and add to hamburger when cooking and mix cheese in casserole.

* To make healthier:
use less cheese, hamburger, rice
add wheat germ, crushed flax seed
add more veggies

Stuffed Peppers

1 lb. hamburger
½ to 1 cup onions
1 to 2, garlic cloves pressed
Salt & pepper to taste
2 cups uncooked rice
4 medium to large green, red, or orange peppers
2 to 3, 6 oz. cans of tomato sauce or 1 jar of
mom’s tomatoes sliced or fresh chopped
1 cup cheese (any kind)

Cook rice per directions. Cook hamburger, onions, garlic, and spices in skillet over med-high heat. Mix rice and hamburger mixture together. Put in tomato sauce.
Cut off tops of peppers and remove seeds. Boil for 10 minutes. Make sure water is boiling before adding peppers. When cooked removed peppers and drain upside down for about 5 minutes. Grease casserole dish and add 1/3 the cheese in the bottom of the peppers. Stuff peppers with mixture next. Place in casserole dish. Put remaining mixture around peppers. Top with remaining cheese.
Cover and cook at 350 degrees for 45 minutes. Last remaining 10 minutes remove lid for a crispy top.

Old Fashioned Beef Pot Roast

4 pound roast chuck
2 TB flour
1 TB oil
1/2 cup water
3 med onion cut in 6 chunks
1 pound carrots
2 tsp salt
1/2 tsp dried marjoram
1/4 tsp thyme or oregano
1 pound potatoes

Sprinkle roast with flour. Brown in big pot or Dutch oven. Add rest of ingredients. Put in oven at 350 for 2 hours. Make gravy if you want with the juices.

Amanda and Julia Child's Potato Salad

This is a recipe I got after Watching Julia Child. This was such a hit we all make it a lot. It is the now normal Potato Salad. Thank you Julia!!

Make as much as you want and you can change up the amounts as you like.

Cooked potatoes
Celery
Cooked Bacon maybe a little Greece with that
Hard Boiled Eggs
chives if you want
chopped pickle
Half Mayo and half sour cream
Salt and Pepper.

Strogonoff

This is an old Yummy standby that my family uses a lot.

1 pound Hamburger
Cooked macaroni
1 can cream of mushroom soup
3/4 can of milk
parsley flakes
1 cup sour cream

Brown Hamburger add all ingredients except for macaroni. Cook for about two min. Add macaroni and cook for about 10 min or until ingredients are melded. Don't forget Salt, Pepper and dried Parsley.

Shelly's Corn Bread

This is a huge hit!!!!!

You can make this a million ways but the way I make it is.

2 pkgs of Jiffy corn bread mix
Add as many eggs it calls for on the boxes
1 can creamed corn
sour cream
if you want shredded cheddar cheese
and add just enough milk to make it wet enough to make batter.

Bake temp on package directions for about 10 more in and check to see if it is done.

Taco Soup

I think Shelly gave me this recipe.

1 Pound Ground Turkey
1 can chili beans with liquid
1 can black beans with liquid
1 can corn
2 cans diced tomatoes
2 cups chicken stock or water
1 pkg taco seasoning mix

In a skillet cook turkey till done. Put all ingredients in a slow cooker Cook High 4 hours or low 8 hours. Serve with tortilla chips on top with sour cream if you would like.

Asparagus Ham Spirals

This is Teresa's recipe she made it for Grandma's Birthday Party.

1 Bundle of Asparagus
1 tube 8oz refrigerated crescent rolls
1 carton 8oz spreadable chive and onion cream cheese
4 thin rectangular deli ham slices
2 TB melted butter
1/4 tea garlic powder

Steam Asparagus set that aside. Put flour on counter open rolls. Squish together to make one rectangle. Top with Cream cheese. top with ham and asparagus. Roll up and slice to make a @. Lay down on a baking pan top with melted butter and garlic powder mix. Bake 375 degrees for 10-12 min.

Butter Sauce for Vegetables

This is Shelly’s recipe.

1 Stick of Butter
1 tsp season salt
1/2 cup heaping flour

Mix it in to vegetables while cooking add more if needed.

Pepper Steak

This is Teresa's recipe. I got it June 25th of 2001.

3/4 cup shortening
3 cup water
1/2 onion
1 1/2 tsp garlic
3/4 tea ginger
3 TB cornstarch
6 TB soy sauce
6 TB sugar
Chopped green peppers
Rice
Big round steak chopped up as big as you like it. Brown meat will all ingredients till done. Sauté Green peppers add to meat and serve over rice.

Shelly's Meat Loaf

This is Shelly’s Meat Loaf, this is soo good.

1 pound Hamburger
3/4 cup grated carrots
1 tsp oregano leaves
2 tsp garlic powder
S&P
3/4 cup oatmeal or cracker crumbs
1/2 cup grated cheese
1 tsp parsley
8 oz. can tomato sauce
1 egg
4 tab wostershire sauce
1/4 cup milk maybe......

Put all in a loaf pan at 350 for 1 to 1 1/2 hours. When it is 20 min till done add another can of tomato sauce mixed with oregano ketchup and salt and pepper. Then 10 min till done put on some slices of cheese.

Tuna Noodle Newberg

This is a family recipe Shelly makes it a lot and you can make it full fat or you can lower the calories by getting fat free evaporated milk, or light cheese, or fat free cream of celery soup. Up to you but this is sooooo good we make it all the time.

2 can cream of celery soup
2 can evaporated milk
3cups shredded cheddar cheese
1 to 1 1/2 cups miracle whip 4 cans of tuna
1 bagcooked noodles (I like egg noodles)
3 cup or more sliced celery
3 cups onion
oil and butter


Sauté Onions and celery oil and butter till soft. Cook pasta separately till done. Add all ingredients together. Put in the oven 350 degrees for 25-30 min
