Snowball Surprises

I tried this recipe from a Christmas Cookbook and loved them. So, I made 168 of them for a cookie club. They are just the right sweetness and richness for me.

1 cup (2 sticks)butter
3/4 cup powdered sugar divided1
1 teaspoon vanilla
1 3/4 cup flour
1/4 tea salt
1 Cup pecan halves Toasted and finely chopped
1 Bar of Chocolate candy (I used chocolate chips)

1. Lightly grease cookie sheets. Beat butter and 1/2 cup powdered sugar till blended. Add vanilla and salt. Gradually add flour and pecans.

2. Shape in to balls about a tablespoon full. Press chocolate pieces in side of cookies and cover with dough. Place balls on cookie sheet Refrigerate 30 min to 1 hour.

3. Preheat oven to 350 degrees. Bake 13-15 min or till edges are golden brown. When slightly cool Sprinkle with remainder powdered sugar or roll them in it... up to you.

YUMMMMM Makes about 36 or 26 when I make them.
