Fruit Crisp

My favorite!

1 cup Flour

1 cup brown sugar

1/2 cup butter

1 tsp cinnamon

3 cup drained fruit

Set oven at 350. Mix flour, sugar, and cinnamon together. Place fruit in a greased baking pan 9 x 13. Bake at 350 for 30 min

Low to No carb Pumpkin Pie

Very good and healthy. You can't tell it’s not full of badness.

No Carb Pie Crust

1 cup pecans frozen if can
2 TB Butter
2 TB sugar equivalent like liquid Splenda or cup for cup Splenda

in a food Processor mix till looks like split peas. Add butter and sweater. Blend and add to pie pan.

Filling;

1 15 oz. can of pumpkin
2 eggs
2/3 cup milk or cream
1/3 cup cream
1 cup sugar or Splenda
1 tsp molasses
2 tsp cinnamon
1 tea nutmeg
Pinch of cloves
pinch of salt

Blend all ingredients. Pour in pie crust. Bake at 375 for 15 min then turn down to 300 and bake for 30-40 min.

Finger Lickin Chicken

This was my dad's recipe.

1 can cream of mushroom soup
1 can cream of celery soup
1 pkg dry onion soup mix
1 cup rice
1 1/2 cup water
1 chicken cut up or chicken breasts.
Place chicken on top of mix.

Cover with foil. Bake in a 9 13 pan. Bake 1 hour 350 and then uncover for 30 more min.

Apple Cake

Combine:
1 1/4 cup veg oil
2 cups sugar
2 eggs beaten
2 TB Vanilla

Sift in:
1 TB baking soda
1/2 tea salt
1 TB Cinnamon
3 cups flour

Blend and mix gently never in a mixer always by hand.

Add 3 cups Diced apples
1/2 cup chopped nuts

Press down batter with a spoon to flatten as the mixture is stiff.

Use a 9 x 13 greased pan.
Bake 350 for 45 min or until done.

Norweigen Pie

Found this in Grandma Davenports recipe's.

2 eggs beaten till light
1 1/2 cup sugar
1 cup flour
2 TB Baking Powder
1 TB Vanilla
1 tsp salt

Beat all together. Then fold in 2 cups chopped apples raw. Add one cup nuts chopped.

Grease two regular or two small pie tins. Pour in mixture and bake 350 for 35 min.

Vinagrette

1 tsp Dijon mustard
S &P
2 TB fresh parsley
2 1/2 TB red wine vinegar or whatever vinegar you have
1/2 cup plus one TB of olive oil

Add all ingredients except for oil. Mix well. Add olive oil slowly will well blend.

Carmel Corn

1 Cup brown sugar
1/2cup butter
1/2 cup kayo syrup

Cook until bubbly

add 1/2 can sweetened condensed milk. Cook till soft ball stage. Add to popcorn.

Cream Cheese Frosting

Beat 1 pkg of cream cheese with 4-6 tb of butter until softened. Add 1 tsp vanilla.
Gradually beat in 1/2 package of powdered sugar until fluffy. You can play with the amount of powdered sugar.

Oatmeal Cookies

This is my recipe but it looks like I got it from Marsha Sable. It is dated 9-26-80.

3/4 cup shortening
1/2 cup sugar
1/2 cup water
1 tsp vanilla
3 cups oatmeal
1 cup brown sugar
1 egg
1 cup flour
1 tsp salt
1/2 tsp baking soda

Cream shortening, sugar, eggs, water and vanilla. Add rest of ingredients. You can then mix in cherries or whatever you want to go in to them.

Bake 12-15 min at 350

Chocolate Kiss Peanut Butter Cookies

Not sure where I got this recipe but ohh so good.

2 2/3 cup flour
2 tsp baking soda
1 tsp salt
1 cup brown sugar
2 tsp vanilla
1 cup butter
2/3 cup creamy peanut butter
1 cup sugar
2 eggs
5 dozen kisses

Mix flour, baking soda, and salt. Set aside. Beat at med speed peanut butter, and butter till fluffy. Add 1 cup sugar and brown sugar. Beat until fluffy. Add eggs and vanilla. Beat. Stir in flour mixture. Shape in to balls. Roll in sugar, and place about 2 inches apart. Bake 8 min at 375. Remove from oven add 1 kiss in the center while they are still warm. Wait 2 min and then remove from baking sheet.

Frosted Marshmallow Brownies

When I was in College I was very homesick. Someone who I knew had relatives in Salt Lake and owned an apartment building. I was invited to a home cooked dinner at the top of the Apartment building at sunset. It was a great day. We had homemade food and watched the sun go down. The desert was amazing. I made the lady get the recipe and I wrote it down. When I came home we got sick of making them sooo much. I know want them all the time. Again.

1 cup butter
1/3 cup cocoa
2 cups sugar
4 eggs
2 tsp vanilla
1 1/2 cup nuts
1 pkg marshmallows
1 1/2 cup flour

Blend butter, cocoa, and sugar. Beating until fluffy. Beat in eggs one at a time. Stir in flour, vanilla and nuts. Pour in to a greased 11x15 half cookie sheet. Bake at 350 for 20 min

When done remove from oven. Put marshmallows on top and return to oven for 6 min. Cool to room temp. Top with Frosting.

Frosting

1/3 cup butter
2 1/2-3 cups powdered sugar
1/3 cup cream or milk
1 tsp vanilla
2 TB cocoa

Mix butter add powdered sugar, cocoa, cream and vanilla. Beat until thoroughly combined. Spread on cooled brownies. Let stand 1/2 hour before cutting.

Carmel Cream Cake

This is from Grandma Davenport (Blanche)

I found this in her old recipe's so I thought I would add it.

2 1/2 cup sugar
1 cup butter
5 eggs
1 cup buttermilk
3 cup cake flour
5 tbsp. strong coffee
4 tsp cocoa
1 tsp baking soda
2 tsp vanilla

Cream butter and sugar. Sift dry ingredients together, beat eggs whites. add separately. Add yolks to butter and sugar. But soda in buttermilk. Add all together. Stir in coffee and vanilla. Fold in whites.

Bake at 375 for 30-35 min 3 layers.

Icing

2 cups powdered sugar
1/2 cup butter
3 tbsp. coffee
1 egg yolk
2 tsp cocoa
1 tb Vanilla

Sift dry ing. Cream butter and sugar. Mix well and ice cake.

Yum Yum Cake

This is an old recipe from my mom. Not sure it's origin. We make it when we want a sweet but are too poor.

1 1/2 cups flour
1 cup sugar
3 tsp cocoa
5 tbsp. veg oil
1 tsp vanilla
1 tsp baking soda
1 tsp salt
1 tsp vinegar
1 cup cold water

Measure flour, sugar, cocoa, baking soda, and salt together. Make a hole in the mix and add oil and vinegar, add water. Mix well. Bake for 30 min at 350 degrees. Put a lot of powdered sugar on top. Yumm. I like to make it in a smaller pan than a 9x13 for to make it higher but mom likes it crusty in a 9x13...so it's up to you.

Basque Beans

Mom made this from a lady that she works with that is Basque and she loved it so much she made it and it was great!!

1lb lean ground beef (browned & drained) ADDED A FEW ONIONS
1 can (31oz) pork and beans (drained)
1 can (15.5oz) lima beans (drained)
1 CAN WHITE BEANS
1 can (15.5oz) garbanzo beans (drained)
1 can (15.5oz) kidney beans (drained)
1 CUP BLACK BEANS
1 can (15.5oz) yellow or white hominy (drained)
1 CAN CORN
½ cup chopped green pepper
½ cup chopped red pepper
¼ cup ketchup
¼ cup maple syrup (any kind of pancake syrup will work)
½ cup brown sugar
2 tablespoons vinegar3 or 4 Basque Chorizos (sliced)
Optional: ½ can of water (use one of the bean cans)—add this if cooking all day in the crock pot I always cook mine in a crock pot but you can put it in a casserole dish (sprayed with Pam) and bake in the oven at 350° for 1 hour.

Amanda's Bananna Bread

This is from the cook book Cook This Not That. It is really healthy and I love it. You can also sub in whole wheat pastry flour for the flour and cup for cup Splenda for the sugar. I have done it and it works great!!

27 g sugars

YOU’LL NEED:
4 Very ripe bananas peeled and mashed
½ cup Greek yogurt
4 tbsp. butter melted
2 large eggs
1 tsp vanilla
2 cups flour
¾ cup sugar
½ cup toasted walnuts chopped
1 tsp baking soda
1 tsp baking powder
½ tsp ground cinnamon – I use a little more
½ tsp salt

HOW TO MAKE IT:
1. Preheat oven to 350, butter a 9x5x3 loaf pan
2. Combine bananas, yogurt, butter, eggs, and vanilla in a mixing bowl. Mix till well blended. Then add to that Sugar, walnuts, baking soda, powder, cinnamon, and salt. Until well blended. Basically all but the flour. When all is blended well then add the flour a little at a time.
3. Add the batter to the loaf pan and bake on a low rack for about 50 minutes, until a toothpick comes out clean. Let cool for 5 min, and then take out of pan.

Makes 4 servings, cost per serving is $0.96

Sweet and Spicy Beef

I made this from my Cook This Not That book. I love it and make lots from it. I have made this many times. It is good over rice.

300 CALORIES
13 G FATS
5 G SATURATED
570 MG SODIUM

You’ll need:
2 Tbsp. low sodium soy sauce
2 tsp Cornstarch
12 ox flank steak thinly sliced against the grain
½ tbsp. veg oil
8 scallions chopped
4 cloves garlic, thinly sliced
2 cups mushrooms sliced
4 cups green beans ends removed…or sugar snap peas
2 tbsp. hoisin sauce
1 tbsp. chili garlic sauce

How to make it:
1. In a large shallow dish, stir together the soy sauce and cornstarch with a fork. Add steak, toss to coat, and let sit for 10 min.

2. Heat the oil in a wok or large sauté pan over high heat. When the wok is screaming hot, add the scallion whites and garlic and cook for 30 seconds, until fragrant but not browned. Add mushrooms and green beans and stir-fry for 3-4 min using a metal spatula to keep the vegetables in near constant motion.

3. Add the beef along with the soy sauce, and continue to stir-fry for 3 min or until beef is fully browned on the outside. Stir in hoisin and chili sauce and cook until the sauce lightly clings to the surface of the meat and vegetables. Garnish with more scallion greens.

Makes 4 servings. Cost per serving 2.64
