Vinagrette

1 tsp Dijon mustard
S &P
2 TB fresh parsley
2 1/2 TB red wine vinegar or whatever vinegar you have
1/2 cup plus one TB of olive oil

Add all ingredients except for oil. Mix well. Add olive oil slowly will well blend.
