Jell-O Pie

This is a family favorite when it is hot out because it is so light and refreshing. Seasonal fruit is good to use with it.

1 pkg. (3 oz.) Jell-O - any flavor you want 9 inch Graham Cracker or Chocolate Crust
2/3 C Boiling Water
1/2 C Cold Water
Ice Cubes
1 Tub (8 oz.) Cool Whip
6 oz. of diced fruit if you wish

Dissolve Jell-O in boiling water in a large bowl at least 2 min. Mix cold water and ice to make 1 1/4 C. Add to gelatin, stirring until slightly thickened. Remove remaining ice. Stir in 2 1/2 C of cool whip with wire whisk until smooth. Fold in fruit if you wish. Refrigerate 10 to 15 min. or until mixture is thick. Spoon into crust and refrigerate 4 hours or until set. Garnish with remaining whip topping and fruit.
I like to use strawberries, bananas or raspberries with a chocolate crust from the store,
