Darn Good Pasta

I found this recipe in taste of homes magazine. This one has
become a regular we like it so much.

darn good pasta

8 ounces uncooked penne (i like to use the mini)
2 green onions, chopped
1 garlic clove, minced
1 tablespoon olive oil
¾ pound of chicken, cut into bite side pieces
¼ cup of white wine
¼ cup chopped fresh basil leaves
1 tablespoon dried parsley flakes
1 (10 ounce) jar alfredo sauce
2 fresh tomatoes, chopped
½ cup grated parmesan cheese, divided
¼ teaspoon pepper

cook pasta according to directions, then drain.

meanwhile, in a large skillet over medium heat, cook shallots
and garlic in olive oil for about 30 seconds. add chicken and
cook until no longer pink. add wine, basil and parsley and
cook for 1 minute.

in a large bowl, combine cooked pasta, chicken mixture,
alfredo sauce, tomatoes, ¼ cup cheese and pepper. spoon into a
shallow baking dish, sprinkle with remaining cheese.

cover and bake at 350 degrees for 15 minutes.

* uncover and bake an additional 10-15 minutes or until heated
through.

* i like to make it ahead to bake for the next day. shrimp can be
mix into or replace the chicken.
